5 Go To QUICK & Easy Recipes

I work a typical 9-5 office job and have a lengthy daily commute so the last thing I want to worry about is having to spend a ton of time on dinner. These are some of my go to fast recipes (I’m talking under 15 min total prep, cook etc) when I just want to make something quick, easy & on the healthier side. I’m not one to use exact measurements, the below recipes are easy to adjust!

1. Avocado Egg Sandwich with Sriracha Mayo

Ingredients:

  • 2 slices of bread (My favorite is Dave’s Good Seed Bread)
  • Mayo
  • Sriracha
  • 1/2 avocado (or whole)
  • 1 egg
  • Red Pepper flakes

Directions:

  • Mash half (or whole) avocado
  • Cook 1 egg (I usually prefer my eggs runny) scrambled is good on this sandwich also!
  • Toast 2 slices of Dave’s Bread
  • Mix the mayo and Sriracha together to create the siracha mayo

The Assembly:

  1. Smear siracha mayo into toasted bread
  2. Scoop on the mashed avacado
  3. Add the egg
  4. Drizzle some more Sriracha if desired
  5. Add on red pepper flakes
  6. Add on second slice of bread
  7. Pepper Jack cheese is also a great option for this sandwich as well!

2. Fried Califlower Gnocchi

Ingredients:

  • Trader Joe’s Cauliflower gnocchi
  • Avocado oil (spray)
  • Pesto ( I love the Vegan Kale, Basil from Trader Joes)

Directions:

  1. Spray pan with avocado oil
  2. Cook on high heat to get the gnocchi ‘fried’
  3. Once gnocchi is fully cooked, mix desired amount of pesto into pan

3. Avocado Toast

Ingredients: 

  • 1 slice of Dave’s Good Seed Bread (Or your favorite type of bread)
  • 1/2 avocado
  • Red pepper flakes
  • Honey

Directions:

  1. Mash half avacado
  2. Toast bread
  3. Scoop mashed avocado onto bread
  4. Add red pepper flakes & drizzle honey

4. Vegan Tacos

Ingredients:

  • Upton Natural Chorizo Seitan
  • Siete Wraps (Any type)
  • Siete Cashew Queso (Spicy Blanco)
  • Lettuce
  • Pico (My favorite is the house made from Whole Foods)
  • Sriracha
  • Avocado oil (spray)

Directions:

  • Cook the Seitan in frying pan (first spray with the avocado spray)
  • Heat up the cashew queso in the microwave

The Assembly: 

  1. Spread the heated up queso onto the wrap
  2. Add the cooked chorizo seitan
  3. Add on the lettuce and pico
  4. Top with Sriracha for desired spice

5. Chipotle Penne

Ingredients:

  • Banza Chickpea Penne
  • Chipotle Bitchin Sauce
  • Red Pepper Flakes

Directions:

  1. Boil Water
  2. Cook through Penne Pasta
  3. Strain Water
  4. Add the Chipotle sauce to Pasta & mix
  5. Add in Red Pepper Flakes
