Since trips to the grocery store have still been less and less frequent my recipes have been getting more creative. This recipe requires only 2 main ingredients and is done within minutes (my kind of recipe!)
Ingredients:
• 1 very ripe banana
• 2 eggs
• Optional: 1 tsp cinnamon
• Optional: Vanilla Extract
• Optional: Chocolate Chips
Preparation:
1. Preheat pan on medium heat, spray first with cooking spray or use melted butter
2. In a bowl mash the banana with a fork
3. Add two eggs to the mashed banana
4. Stir until mixture becomes smooth and fluid
5. Optional: Add some cinnamon & vanilla extract
6. Poor small amounts of batter on the pan
8. If desired add some chocolate chips
9. Cook the pancakes (watch because they cook very quickly)
10. Finish with your toppings
